Here is just one that is featured in our recipe book from Victoria Falls Safari Lodge:
Stuffed Mushrooms with Potato Rosti
Sidenote: This is a wonderful assortment of sides that can make a meal on its own or be served as accompaniments to your main dish of beef, fish, or chicken. My family doesn’t like mushrooms, so this is my indulgence! The potato rosti is loaded with zucchini, a healthy addition to a delicious treat.

Serves 4
Step 1: Stuffed Mushrooms
1 1/2 tablespoons minced garlic
1/4 cup minsed leeks
1/4 cup minced onion
Olive oil
1/4 cup spinach
Salt and pepper
1/4 cup cream
8 button mushrooms
1/4 cup shredded mozzarella cheese
Instructions:
1. Preheat oven to 350-degrees Fahrenheit
2. Fry garlic, leeks, and onions in a frying pan with a little bit of olive oil
3. Slice the spinach and add to the pan
4. Season well with salt and pepper
5. To finish, add cream until slightly moist (you may have extra left over)
6. Remove the stem from each mushroom
7. Stuff the mushrooms with the spinach mixture and sprinkle with mozzarella
8. Bake for about 10 – 15 minutes until mushrooms are cooked through and piping hot
Step 2: Potato Rosti
1/4 cup finely chopped or grated onions
1/2 cup grated raw potato
1/4 cup grated zucchini
1 teaspoon olive oil
1 egg, beaten
Salt and pepper to taste
1 1/4 tablespoon thyme-flavored olive oil
2 leeks, cut into 2-inch chunks
1/4 cup cherry tomatoes
1. Fry the onions, potato, and zucchini together in a frying pan with the olive oil until tender but not browned
2. Mix the egg and potato mixture in a bowl and season with salt and pepper
3. Shape into a patty and fry in thyme-falvored olive oil on both sides until golden brown
4. Fry the leeks in a frying pan with a little bit of olive oil
5. Add the cherry tomatoes to the leeks, season with salt and pepper, and sauté for a few minutes
6. Top the rosti with the tomato and leek mixture and set aside
Step 3: Mustard Gravy
1 1/4 tablespoons brown mustard
3 1/2 tablespoons vegetable gravy
1. Mix the mustard into the vegetable gravy
2. Simmer for 10 minutes
3. Serve with the baked mushrooms and rosti
