Serves 6
Step 1: Crust
¼ cup butter
¼ cup sugar
1 egg
2 tablespoons flour
2 tablespoons cornmeal
¾ teaspoon baking powder
Pinch of salt
- Cream butter and sugar.
- Add egg and dry ingredients and mix.
- Roll out the crust on a floured surface, then place it in a tart pan and allow to set in the fridge.
Step 2: Filling
1 ½ cups milk (separated into ¼ cup and 1 ¼ cup)
¼ cup flour
¼ cup cornstarch
Pinch of salt
¾ cup sugar
Cinnamon to taste
3 ½ tablespoons butter, melted
2 eggs, separated
½ cup dark chocolate
- Preheat oven to 355 degrees Fahrenheit.
- Mix ¼ cup of milk with the dry ingredients (flour, cornstarch, salt, sugar, and cinnamon).
- Preheat the rest of the milk (1 ¼ cups) to boiling point and add to the dry ingredients.
- Add the butter and the egg yolks. Add chocolate pieces. Beat the egg white until stiff, then fold into mixture.
- Place the filling into the crust and bake for 25 – 30 minutes.
