One of our favorite boutique accommodations in all of South Africa is the charming Four Rosmead Guest House.

It’s within walking distance of Kloof Street (where there’s excellent shopping), and it’s ten minutes from the V and A Waterfront shops and restaurants, as well as Clifton and Camps Bay. And something that’s really unique about Four Rosmead is the art gallery within the guesthouse that contains original South African artwork. And, course, the cuisine offered at Four Rosmead is absolutely exceptional!
Below is a recipe from Four Rosmead that was featured in our recipe book, A Taste of Africa:
French Toast with Fried Tomatoes
“This is French toast with a South African twist and it is absolutely amazing! I’ve made this recipe a few times on Sunday mornings in the winter and it is the perfect comfort food for chilly mornings. Be sure to try the fried tomato on the side. You’ll never have breakfast without it again!”
Serves 6
Step 1: French Toast
2 tablespoons lemon juice
1/2 cup sugar
4 eggs
1 cup milk
2 teaspoons vanilla extract
1 teaspoon cinnamon
1 loaf of bread cut in half-inch-thick slices
(1 slice = 1 portion)1 15-ounce can sliced peaches, drained
Method:
1. Preheat oven to 375°F.
2. Mix together lemon juice, sugar, eggs, milk, vanilla, and cinnamon.
3. Place bread slices in a 12-inch pan and pour egg and milk mixture over the bread.
4. Scatter sliced peaches on top.
5. Bake 30 minutes or until cooked through and brown on top.
Step 2: Fried Tomatoes
4 tablespoons extra virgin olive oil
3 ripe tomatoes, sliced in halves
1/4 cup sliced fresh basil
Sea salt & Black pepper
6 slices crispy bacon slices
Method
1. Heat the olive oil in a medium-sized frying pan over medium heat.
2. Season tomatoes with basil, sea salt, and black pepper, and place in the frying pan.
3. Fry the tomatoes for approximately 3 minutes on each side or until cooked.
4. Top each serving of French toast with a slice of bacon and a fried tomato half, and garnish with fresh basil leaves.
